Is it possible to be notified at 2 separate email addresses when someone registers for an event? If so, how do I set this up?

Yes. You go to Event Espresso > Messages > Default Message Templates. Then you go to edit the Event Admin context of the Registration Approved message type.
There, you’ll see a CC field along with a To: field. You can input an email address into each of those fields. There’s more information, along with screenshots, here:
