Is there anyway to change how the single event page, e.g. display the content in tabs to make the description/info more reader friendly?

You can break up the Description section in to tabs by installing a plugin like this Tabby Responsive Tabs, then use its shortcodes to separate parts of the description into their own tabs. More information here:
