The templates used for each section are within /event-espresso-core-reg/public/Espresso_Arabica_2014/
However the Arabica theme there is an example theme based on twentyfourteen, you can’t just copy all of the templates within that directory into your theme.
The content-* files should be fine, but you’ll need to create a single-espresso_events.php or archive-espresso_events.php from your themes single.php and/or archive.php depending on what you want to edit.
If you let me know what changes you would like to make I can advise on which templates you need to use from there.

So I’ve added a archive-espresso_events.php page and a single-espresso_events.php to my child themes root folder. Ive copied the php from the parent theme to start modifying.
Can I assume this will be safe from being wiped by future updates?
Yes the reason to use a child theme is to prevent customizations from being wiped by future updates. The exception to this would be if the child theme is distributed and gets updates.
