We duplicated an event and went to clear the attendees of the duplicated event and it got rid of them entirely! Similar to what happened in this thread here: https://eventespresso.com/topic/possible-to-recover-deleted-attendees/
I have a WP Engine backup which I did but it didn’t seem to restore this information? What can I do to fix this as it is likely to cause some major issues?

Actually when you duplicate an event, it doesn’t copy over the attendees from the original event. So it sounds like you actually deleted the attendees from the original event.
So what you can do is double check and make sure you’re looking for attendees from the original event. If they’re all still gone, you can revert to an earlier backup.
