Two questions:
1 – I want to accept checks at only one event. Once I turn on the Check options it shows for all events. Is there a way to make it apply to only one event?
2 – I want to take registrations but direct payment to another site Can I do that?

It depends what you are looking for here.
At its most basic, you could use something like the Invoice payment method and add a link to the other site for payment.
However, if you are looking to integrate payments with the other site so that EE is ‘aware’ of the payment made on the other site there is much more to it and you will need custom payment method.
