If you decide that full support for outlook 2010 is important then you can customize the templates for outlook by directly editing the html used in the message template editor ( by adding inline styles, use compatible html, etc).

The downside to making emails look nice in outlook is they will not likely look as nice in all the other email clients. Event Espresso’s default templates were designed to look nice in the majority of the email clients that do support CSS.
