I have a problem. I have an ongoing event, the early bird date has expired. So I want to create new tickets for the regular registration. But I cannot change the expiry date of the new ticket. It doesn’t allow me to do so. When I change it, it goes back to the default date automatically.

The screenshot indicates that another plugin (or possibly the theme) is overriding the ticket editor. The way forward will be to troubleshoot by means of process of elimination to find the conflict.
You can rule out a plugin or theme conflict is by installing the Health Check plugin, then go to WP → Dashboard → Heath Check → Troubleshooting. There you’ll Enable Troubleshooting Mode, then once that’s activated you’ll reactivate Event Espresso only via the Health Check’s Troubleshooting item in the WP admin bar. At that point with the other plugins deactivated for the admin only, can you edit the tickets as expected?
