I know this button has different text depending on different situations. How can I change the text of the various states of the button?

You can change the text by using the filter hooks. There’s a list of filter hooks in our documentation here:

The documentation is pretty sparse as far as showing how to use the hooks. Could you please provide an example of how to change ‘add to cart’ button text with a hook?

The documentation doesn’t go into how to use WordPress filter hooks. You can find examples of how to use WordPress filter hooks in the WordPress codex, in StackExchange, or elsewhere on the web.
