Other messages are being sent from the site, so we don’t think it’s a site-wide issue, and we also use Postmarkapp for transactional emails.
We have now changed the default email for all messages to be sent from, but the messages are still not being sent when manually trying to send them from Message Activity.
Using latest EE4 plugin with Stripe, Promotions and UK Counties Pack plugins.
When EE shows this it means wp_mail() returned false when EE passed over the email to send.

Where did you change this?
Does this change show in messages being generated and is it still happening with this ‘new’ address set as the from address?
The new email to send from is now working for all messages.
