I’m setting up registration for a conference for medical practices. Any practice might have as much as 20+ attendees with 4 different ticket types. If they’re half way through registration for all attendees and realize they made a mistake in the number of one ticket type or another, they lose all the data if they go back and edit. Is there a way to allow them to edit ticket numbers but keep the registration data already entered?

Yes, the Multi Event Registration add-on includes a cart-style checkout where the cart can be viewed and ticket quantities edited during checkout.
