In short, whichever way you do it will need some custom development. We don’t currently have anything in EE that will work with customizations to suit your needs.
You could create your own version of ESPRESSO_EVENT_ATTENDEES and output whatever details you need, add additional sorting etc but it depends how comfortable you are with PHP.
Another option is to set the ‘trainers’ up as users on the site and create roles that only have access to the specific data types you want. For example, creating an ‘event organizer’ role and setting that on the trainer’s account, then set the trainer as the event author and limit what they can see based on capability.
