I’ve been trying to change the event times to 8am-4:30pm EST. However, after I make those changes, it will revert to something different (its not consistent). The first time it reverted back to 3am-1:30am, I changed it again and now it reverted back to 5pm-1:30am.
I did do some poking around and noticed that in the system information there is no value listed for use_event_timezones. Should I add that item =1? Has anyone else had issues with times jumping around?
This usually happens when a plugin (or the theme) is using the function date_default_timezone_set() which is highly discouraged.
Start by creating a backup of the site (just to be safe) then try disabling all non-EE plugins and setup your event dates/time, does it now correctly save?
If it does activate each plugin individually and resave the event inbetween to find the plugin that is causing it.
If not switch the a default theme such as twentyfourteen and retry again.

Thank you for the prompt response. I had two other event management plugins that I had recently installed. After I removed those plug-ins, everything seems to be working properly.
