Hi there,
The simplest solution would be to just hide the Thank you page content using CSS:
#espresso-thank-you-page-overview-dv {
display: none;
}
You can add that to Appearance -> Customize -> Additional CSS
Then edit the page with the [ESPRESSO_THANK_YOU] page and add your text directly to the page. Leave the shortcode loading on that page as it needs to run to finalize the registration but your hiding the content other than your own.
