I have a multi Day event with multiple classes on each day. I don’t yet know all the classes I will have or when. I want people to register now for the event and pay for the days they are coming and then in a month come back and add in the classes (which may be no additional charge or may have an additional charge) but I only want then to be able to register for the classes if they have already bought or in the same cart with the days of the event. If the family of 5 is registering, then they might have different classes available (adult classes for adults and kids for kids)

With Event Espresso you can have an event with multiple days and sub-events by selling tickets to only certain days. You can also add in additional days to a ticket later as long as the new datetime is assigned to that ticket.
But I’m not sure what you mean about using the same cart.
I have an event on a Sunday. I am charging $100 for it. But I want them to sign up for their particular classes within that day. Those classes are either free or have a material cost (such as $15. I want them to be able to only sign up for the classes if they are also buying the day pass into the event.
The other thing I need is that I want people signing up today for the Sunday Day pass to get their commitment and for them to pay. My event occurs in 2 months and I won’t have a finalized class schedule for another month. I want them to later go in and modify their registration to sign up for classes I have added.
One option you have is use the WP User Integration add-on and set it to create a user account when they register. This way you can require them to log in to their account when they come back later to select the specific classes.
You can notify them when the class schedule is ready by sending out a batch message that tells them to come back to the site later and register for the classes. It’d work best to have the classes set up as a separate event that requires being logged into the site. So they’ll need to log in, and once they’re logged in, it will add their class selections as registrations to their account.
