Is there anyway I can default all days as available unless they’re already Booked or set as Booked in the backend?
That should happen automatically, but if it isn’t, can you post a link to the event page so we can investigate further?

Yes, you go to Event Espresso > Registrations, click on the name of the attendee, then scroll down to “Registration Form Answers” then click “edit the above question group”. Then you can make edits, then click the button to save.

From that same Registration record page where you made the edits, you click on View Transaction and on that page you click a button that says “Send Payment Reminder”.
