Why does the switch to invoice button appear on an incomplete status/unapproved registration order confirmation?
How do I delete it?

Can I ask, why would it not?
Right now EE includes the switch button within the templates to give the users the option to view either.
There’s no conditional login for that button within the template, so it displays regardless of the registrations/transaction status. You can remove it within the templates:
Event Espresso -> Messages -> Default Message Templates -> Receipt
Remove the [INVOICE_RECEIPT_SWITCHER_BUTTON] shortcode and save the template.
