I’m setting up several conferences of the same type with the following profile:
1. Abstract submission upload/management: is it possible? how?
2. Customizing the layout of the list of sessions (event datetimes). Is it possible to edit the list of sub-events created here as a conventional conference program? Is it possible to see it in a table (because we will have 30 or 40 sessions during the 2-day conference)?
3. On registration, how can we have a single box for attending all sessions?

This would require custom PHP development of a template to extract the datetimes from an event and display them into a custom layout. If this is a one off conference it may be better suited to use a plugin like this one to display the list of sessions: https://wordpress.org/plugins/mp-timetable/
Depending on your layout requirements, the EE4 calendar add-on can also display datetimes in a single date view by default.
3. On registration, how can we have a single box for attending all sessions?
Do you mean a single ticket for attending all of the sessions? If so yes, all of the datetimes can be attached to a specific ticket by opening the Advanced ticket editor (click on the gear icon) then check all the boxes next to the datetimes.
