Is there a method by which we can include the details of coupons, if any used, in the registration confirmation email send to event admin? A shortcode perhaps?

Hi there,
An update to the promotions add-on which adds a [PROMOTIONS_USED] shortcode to the message shortcodes (when available to that message) has just been pushed live.
Update to the latest version of the Promotions add-on (currently 1.0.11.p) and edit the Event Admin template. You if you click the stacked icon on the right you should find the [PROMOTIONS_USED] shortcode there.
If you do not see the update available on your site go to Event Espresso -> General Settings and click update to force EE to check for updates. (Doing this multiple times within a short timeframe will have your site rate limited for some time, so use the above sparingly)
