Is there a way to automatically add the Event category to a users registration records? When we export the EE data, we’d like the event category to be automatically associated with each registrants booking details. Ideally this should be a hidden field which is updated depending on which category is selected.

You can add the PHP snippet that Tony made:

What that will do is when the CSV report is generated, it will grab the category/categories from the event for each registration and include that information in an additional column of the report.
You can add the above to a functions plugin or, if available, into your WordPress child theme’s functions.php file.
