We’re using EE4 for volunteer registrations and one piece of information we need to collect is our volunteers’ birthdays. We’re using date picker field for that.
Because many of our volunteers are older, the calendar that pops up with the date picker isn’t super useful. Is there a way of hiding that (while keeping this a date field)?

No because the calendar is the actual input. You could add a text field for the same question, and the year part of the calendar can be filtered to show a range of years as well. Here’s an example of some code that shows how to change the range of years that appear above the calendar:
