I’ve read most of the posts about this happening, but I am experiencing the following:
I set up a new event, set the date and start time, click ‘done’. The time changes (usually by an hour).
I continue and set up the finish date and time (same day), click done, and the finish AND the start time change – usually by an hour (another hour in the case of the start time).
I have the WP time zone set to my city (Sydney).
Theme is Astra, Wordfence is installed and Elementor. Not much else!
This is usually caused by the theme or another plugin calling date_default_timezone_set(), if you test this with just Event Espresso and a default theme, does it work then?
You can do that using the the WP Health Check plugin. Install and active, then go to Tools -> Site Health -> Troubleshooting -> Enable Troubleshooting Mode.
That switches your install to have no plugins active and to use a default theme but only for you, the admin.
Then in the admin bar go to troubleshooting -> manage active plugins and activate Event Espresso.

Switched to Twenty-Twenty theme with no change.
Likewise, enabling just EE in Troubleshooting mode does not change the issue if I attempt to edit an existing event.
But noticed this little twist:
If I create a new event, the times stick – initially.
But if I then go back and edit those times in that event, they start moving…
May I ask what’s set in the WordPress > Settings > General page for Date format and what’s set for Time format?
