In the above screenshot my client wants me to change “Company Name:HindmanSanchez” to “Company Name: HindmanSanchez Academy” Isn’t the part after Company Name being populated by the form the person filled out to register? The only reason it says HindmanSanchez in this test is because the tester used that name when filling out the form correct?

We can’t tell from that screenshot, it would be an answer to a custom question within the registration form, or it could be hardcoded within the emails themselves.
That’s the Registration Approved message type within the Event Admin context.
Go to Event Espresso -> Messages -> Registration Approved and click on the ‘Event Admin’ link – http://take.ms/sqsW7
Find where company name is output there and see if its hardcoded or uses a shortcode.
If hardcoded you can use whatever you prefer (although it wouldn’t really make sense to hardcode the answer)
If its using an ANSWER_* shortcode then it its whatever the registration placed within that field during registration.
