All other custom post types and permalink structures were still working perfectly fine, so this wasn’t a general permalink issue, it seemed to be just an event espresso permalink issue.
I went in and enabled/disabled the plugin, re-saved permalinks + purged cache, this has now resolved it,
We had an entire weekend of no one being able to access our events.
Could you advise what could of caused this and how we can make sure this does not happen again.
The above can happen if permalinks have been flushed at an unexpected point before EE could add its rules.

When the above happens you can usually just go to Dashboard -> Settings -> Permalinks.
You don’t need to make any changes, just load the page and that will flush permalinks again to fix it.

I can’t tell you how to prevent it as it depends on what caused the permalinks to be flushed… however, I have a snippet which logs the rewrite rules each time they are flushed with a stack-trace of what called for the flush. It doesn’t fix anything but logs when cause the rewrite rules to be missing which we can then investigate further, however, that does mean that it needs to happen again on the site so it can be logged first.
