I am creating an online conference event that will have 10 different date-times within it. Each date-time represents a separate session, led by a different instructor in a different Zoom meeting. I have associated separate tickets with each of the date-times. I used your use case here as a model: https://eventespresso.com/use-cases/conferences/
I need to be able to
1) generate a list of registrants for each session within the event
2) customize the emails sent to registrants for each session, so that they are directed to the right Zoom meeting.
Can I do this in EE4? Or do I need to set up each session as a separate event?

If you edit the event and click on the icon for the specific datetime you want to view, EE will list out the registrations specifically for that datetime.
At the bottom of the list you can click the ‘Filtered CSV Report’ button to export those filtered registrations.

With Event Espresso you can assign message templates to specific events, but not specific datetimes/tickets within that event, so officially if you want unique details for each datetime you would need to separate these out.
However, there are hooks within EE that will allow you to add custom meta fields to each datetime which can then be pulled into the event messages. Meaning if the email is the same for each datetime with the exception of the Zoom details you could add those as datetime meta and pull them in using shortcodes.
