I have removed an email address from the event registration message template, to stop that person receiving the emails.
However they are still receiving the emails even though the email address has been removed. Should I be looking somewhere else to find email addresses for event registrations??
The only place that Event Espresso can be used to explicitly set the email address is within the message templates themselves, either by hardcoding the emails into the template or using shortcodes to pull the address(s) from elsewhere.
First, which message type are you referring to and which context within that message type?
I’m assuming you have not set up any group emails outside of WordPress, meaning your email provider, and you aren’t sending the email to that group, which this person is included in?
The email address referred to was only, to my knowledge, set up as a 2nd email in the c.c. line on the registration template. It was removed from the admin of that template, but mail is still coming through when a registration is done.

Then yes, thats the only location you would need to change it.
Double-check that it hasn’t also been added to the Registrant or Primary Registrant context.
