You can do that by using the Payment Methods Pro add-on and then using a custom field:

Hi Lorenzo
I have activated this and all is working well
I do however get a warning message at the top of each page
“There are no Active Payment Methods setup for Event Espresso. Please activate at least one.”
Is there a way to remove this warning message or is this just a quirk of using this addon

That’s actually a bug that happens when you have two active gateways and both are set to Usable From Only Specific Events. It’s been fixed in the 9201 branch, which you can download here:
https://github.com/eventespresso/eea-payment-methods-pro/tree/FET-9102-payment-methods-metabox-on-event-editing-page
Once the above branch is finished with testing, it will be merged to the Master branch.
