I see there’s been a number of posts about displaying the event details in the Grid View Template, so I am surprised this is not provided as an option.

Some WordPress themes can do a layout similar to your screenshot, and the grid template plugin wasn’t designed to provide an option to display more event details.
For example, the Baskerville theme’s post archive layout is a grid, so the native events route is automatically a grid. Other themes have this option too. In other words, if your WordPress theme has an option to display posts in a grid, you do not necessarily need the event grid layout plugin.
