I’m creating custom message templates, but I’m wondering if this needs to be done for every Default Message Template? I’m having an issue where I cannot select the Template Style/Structure within the editor.

You only need to create a custom message template for the templates that you want customized. After customizing a template, be sure and give it a unique name so you know which template to select in the Notifications panel of the event editor.
The Default template can remain for any non-customized message templates.
