It’s possible to do something like this. If it’s the case where there will be one sign up for the entire 6-week course the simplest way to set this up would be to create one event. Then you can list out all the dates the class meets in the event description.
If you were going to use something like the Recurring Events add-on and create an event for each time the class meets, some modifications could be made to make it so the other dates are not open for registration but only display for the purpose of displaying all the dates the class meets. No neither of these are really satisfactory solutions.
For one off or two day events in sequence, this is fine. But it does not allow for classes over several weeks with a new start date each week. I also noticed that if an event was create without a recurring you cannot add a recurring event to that later?
It would be so much easier if you could just copy/duplicate an event as well?

No, existing events cannot be turned into recurring events.
Events can be duplicated, simply edit the event and in the top right is a button to duplicate the event.
This will not duplicate a recurring series but the duplicated event will be a recurring event that can have it’s settings changed. It is a separate recurring series.
