Unless something has been changed within the message templates themselves, you should be able to update the ‘Primary Contact Email’ within General Settings for this.
Go to Event Espresso -> General Settings.
That will open the ‘Your Organization’ tab by default.
In there is a ‘Primary Contact Email’ address, update that and test a new registration, does it now use the correct address?
