Everytime I install the latest update it comes up with the following:
Fatal error: Cannot redeclare espresso_version() (previously declared in /home/matthud/public_html/wp-content/plugins/event-espresso-core-reg/espresso.php:48) in /home/matthud/public_html/wp-content/plugins/event-espresso/espresso.php on line 35
This is annoying as it is completely rendering my site un-usable.

Hi Karl,
That error means you are also running EE3 at the same time as trying to install EE4.
You can run either EE3 or EE4, not both at the same time.
To update you’ll need to de-activate EE3 and then install EE4.
However, to note, EE4 is a completely new system built from the ground up and very different to EE3. I would recommend updating a development copy of the site (either live or locally) to check it fits all your needs and the migration works as expected before updating the live site.
