ADVICE NEEDED: How to divide up conference registration/workshops as events

Followed a EE youtube that demo’ed making one event of a conference with options underneath for workshops. But don’t think that’s working well for us. We have 12+ side trips and 8 workshops plus more than 6 meal choices. Made three events: registration/meals, trips, workshop and tried using multi event option but the resulting global emails confirmation are awful formatting with apparently no way to customize with the multi event option on. So back to one event with (too) many options. But now struggling with ticket selector page being really impossible to format. C’mon Event Expresso. Help me out here. Much steeper learning curve than expected.
