Currently, we have removed the calendar from the website for these reasons. If it is possible to add tickets to a page versus just events, we think this would solve our display problem. Of course, always open to your suggestions if there is another solution!
Is it possible to add tickets to a ‘page’? (as opposed to an event espresso event?)
No, you can add tickets from an event into a page, as in you can display the same ticket selector you have on that event on a page but not just tickets assigned to a page itself.
You do that using the [ESPRESSO_TICKET_SELECTOR event_id=xxx] shortcode.

Just to confirm I understand what you need.
On the event you linked to, you want the tickets (which you are using for donations) to be available for purchase from April 18th through to April 25th?
If so, you’ll need to alter the datetime dates as you mentioned above, there is a snippet you can use so that the calendar only uses the start date for events that span over X number of days.
For those types of events you can then hide the datetime list on the single event pages.
