Hi there,
I was wondering if there is a way that I can re-arrange a single event template based on the event’s category (or some other taxonomy)?

Hi there,
That’s an interesting idea. The tricky thing about assigning a template based on a taxonomy is an event can be assigned to more than one category/custom taxonomy.
The recommended way to assign a custom template is by using the Page Template selector metabox within the event editor. Additional custom templates can be built by following the guide from the WP theme developer documentation:

Another approach you could take is you start with one template and add conditional checks within the template to change the layout if the currently displayed event is assigned to a specific category.
