I can’t seem to find a clear answer as to whether Event Espresso will give me the functionality I’m looking for or not.
What I am looking to accomplish for a small local swim school is this:
1. Allow parents to view the schedule of available classes for each level of swimmer and see whether a class session is full or not.
2. Allow parents to register their kid for the appropriate class if there is still room in that class for that particular (2-wk) session.
3. Allow parents to register multiple kids at a discounted rate for the additional kids.

Yes events can be viewed in a list format. You could separate swimmer levels by using categories. Events’ tickets will display if they are sold out or not.
2. Allow parents to register their kid for the appropriate class if there is still room in that class for that particular (2-wk) session.
Yes as a standard attendee, though an email is required and you may wish to add a question to get the parents details.
3. Allow parents to register multiple kids at a discounted rate for the additional kids.
EE3 can do this via the Volume Discount addon. EE4 can’t currently do it via discounts. You could make ticket bundles (https://eventespresso.com/wiki/create-ticket-bundle/). The problem with ticket bundles is that they can only handle set numbers of tickets, e.g. 5 children, rather than UP TO 5 children. It wouldn’t be too hard to make a few tickets (1 child, 2 kids, 3 kids, 4 kids, etc) as not too many people want to enrol 10 kids in one go I assume.
