It appears that there is no notification available when a customer succeeds and proceeds through the payment process.
The customer receives their ‘thank you’ email but nothing is sent to the administrator – so currently there is no way, without physically checking against payment gateway receipts, of seeing if someone has actually paid for an event. Booking confirmation sent to admin fine, but why not any way of being notified when a person has paid (and successfully passed back to the callback page)?
