Hi,
We want to take in payments from Indian customers and one of the biggest payment processors (PayTM) isn’t one of the supported payment options (https://eventespresso.com/features/payment-options/).
Is there any on the list that would be viable for Indian customers? Many use their phones and pay using their bank accounts and I don’t think many use PayPal or credit cards over there.

One other option you could look into is contact WPGateways: https://wpgateways.com/support/custom-payment-gateway-integration/
and they may be able to build a PayU India gateway for Event Espresso 4.

Are there any other options? Perhaps a method where we could take in their entry and manually approve them once they transfer money to our Indian bank account?

Yes, the Bank Transfer payment method can do that.
