Trying to update registrant info with class certificate expiration date

Hi! I am wanting to add information to each registrant after they have attended a class. I want to add things like Date of Birth, the class they took, and when the certificate expired. I don’t want to add things like DOB to them to do when they register because a lot of times, it is the supervisor registering them. I also need this information to be in a report that I can pull at a later date to be able to send them reminders of the expiration date. How can I do this?
