The other requirement is that I have an unlimited amount of tours to sell every day for the entire year. I would like to show a calendar on the event page, listing all days as available, let user select the day they want to book, there is no need for an end date, and then allow them to select those options I mentioned above on the same tour page.
I found some documentation about un-ending events but it sounded like I would have to create multiple daily instances of each tour. Essentially I want to link my Book Now button on my existing theme tour page to the “Event” page with EE where the user actually books choosing their date, options, and fills out contact info and moves on to payment.
Generally yes, you would need to create an event per day. This is especially so if the costs change depending on season, or there are capacity constraints required. While you could have everything in a single one year long event, it would more likely be more trouble than it’s worth.
EE3 has an addon plugin called Recurring Events Manager (REM) which allows you to create events in bulk and thus speed up the process.
In Event Espresso events must have valid start and end dates, which is why you would need to create multiple events, we just don’t have an open ended event system like what you described.
In some ways it sounds like you might need something closer to a booking style plugin (something like a chauffeur would use, where everyday is bookable) rather than an event management plugin.
