We use EE extensively. Some of our registrants state that they have not gotten our confirmation emails that we send. We ask them to check their SPAM folder.
Is there a way we can check to see if the message was actually sent and the date & time – where is that information kept?

You can check the WP error log to see if there are errors pertaining to the emails. We recommend a service like Postmark to ensure email delivery. Although it is a paid product, it is relatively inexpensive.
