Hi,
I am attempting to remove this checkbox because we need basic information from all our registrants…and I have installed the My Custom CSS plugin and attempted to insert the following code:
div#spco-copy-attendee-dv {
display: none;
}
I hit Save and nothing changes–is there something I’m missing on how to insert code into My Custom CSS, like do I need to insert the code in a particular section or something to that effect?

No, anywhere within the My Custom CSS editor should be fine so long as it’s not within a media query.
Alternatively, there’s a way to remove the html that makes up the Copy Attendee info form. You add a blank file to your WordPress theme and name it:
copy_attendee_info.template.php
