Second, is it legally acceptable from your side or do you see it as some sort of (copyright) violation?
And Third, how can it be done?
I’m pretty sure that removing Event Espresso from the admin pages isn’t a form of copyright violation. Removing the copyright notices inside the plugin code could be though.

Any other instances of strings that have the “Event Espresso” in their text would most likely be translation-ready and can be filtered using the gettext filter.
