I would like the default “Event Listings URL” and “Event Listings Slug” to remove the default [all events listed] shortcut
I have pointed the slug/url to the page I have created with my own table view list that excludes a few classes that I do not want any one to have access to.
My page disappears and is taken over by a default [all events list]
How do I remove the defaulted event list that appears?
The default /events/ page can be changed in Event Espresso –> Events –> Templates.
For example, you could change it to classes and then your events listing URL would be similar to this:
example.com/classes/
If you are not wanting to change it but are wanting to use your own, then you could use a free plugin like Redirection (https://wordpress.org/plugins/redirection/) to create a redirect to route traffic from the /events/ page to another page of your choice.
Based on this comment:

You have probably created your own /events/ page so I would change it through the settings page mentioned above and then use Redirection to route traffic to your new page.
