In Settings, it says: This function is experimental and may not function as expected. You should adjust your attendee limit accordingly.
How experimental is this feature? We have 20 events, with 5 time slots each day. Each time slot has a capacity (attendee limit) of between 8-13 depending on the venue.
On a quick test, it seems to have worked okay, but we are doing this on a large scale and would like some confirmation that it will work. Our alternative would be to create 100 different events for all the different timeslots over the various days and venues.

I have never come across any issues with it in my testing, but like you my testing has been small scale.
Some users have noted some inconstancy with the feature, in terms of correct deduction of numbers, but others have not had an issue. I think the main reason for this is that the feature doesnt work with group bookings where no details of the additional attendees is taken, as not attendee as such is marked in the system for the additional tickets, it just doesnt see them.
The other thing, is to make sure that the event has an overall attendee max limit that equals the combined ticket limits (eg 3 tickets each with limits of 20, overall attendee limit must be 60), otherwise people can still register event when the tickets have booked out.
