Hi,
I am wondering whether it is possible to add an option for the user to opt out of joining the Mailchimp mailing list, i.e. a checkbox on the form.

Currently no, not without some custom coding.
Although perhaps not ideal, if you have double optin enabled with Mailchimp, the user can simply ignore the follow up email from Mailchimp to register for the mailing list.
I’ll add this request to our feature request documentation.

Thanks Dean. I was forgetting about Mailchimp’s double opt-in. It appears that this can’t actually be disabled (unless you know of a way to do so!).
My ideal scenario would be disabling the double opt-in and adding a checkbox for people to decline to be added to the mailing list.

Hmmm I believe that you can’t stop the double optin with a Mailchimp free account but it may be possible with a paid account, but I cannot confirm this. They make finding the info extremely hard.
You could probably mess with the code in the Mailchimp client to over ride this but I would strongly suggest you dont. Mailchimp really wants to enforce double optin emails.
