New Version, I can't find settings from previous version

Having used EE for a few years, simple and only process was convention registration. Conventions usually occur annually, so wash/rinse/repeat was fairly uneventful. This year we had to move to a different domain name, hosting etc. The new theme/interface is throwing a curve.
Primary issue 1:
I do not want registrants to see how many tickets have been sold. I had been able in the past to hide that info, but I can’t find that setting (if it was a simple setting and not a customization.) I have to admit I’ve slept since the original issue arose years ago.
Primary issue 2:
I may be over thinking, but the convention for 2024 begins Friday Aug 30 and completes on Monday Sep 2. 4 ticket levels are sold that give all access to all days. Do I have to create multiple days or can I just enter the start/end date and assign all 4 tickets?

Primary issue 1:

Go to Event Espresso -> Events -> Templates (tab along the top of the table)

Scroll down to ‘Ticket Selector Template Settings’ and set ‘Show Ticket Sale Info?’ to No, then save.

Does that remove the section you are referring to?

It depends what you want to do with the tickets, you mentioned that you want them to have access to all days and if so, either can work.

A single Datetime with the start date set as Friday Aug 30 and End date as Sept 2nd will work BUT… to some it will look like 1 single long event across all of those days starting at say 9am on Friday and ending Monday Sep 2nd at 5pm. Meaning your registrants don’t see that it opens 9-5 on each of those days which may or may not be an issue for you.

If you want it to show as separate days you need an individual datetime for each date and the tickets assigned to them all.

I found the answer to Primary issue 1. Ticket Sale Template “Show Ticket Sales” set to NO WAY JOSE.
