I am not sure if I understand this “no billing / invoice information from Mollie into our system”.
Can you please give us some more information about the Event in which you are facing the issue?
Specifically, if it is a paid event or free, and if it is paid then let us know if the payment was made from the front end or the backend.
Also, please share a direct link to the event page.

I’ve checked the website and can see you are using an older version of the EE plugin. Can you please update the plugin to the latest version (v5.0.16)?
