I see that you shared that this was previously work but recently stopped working as expected.
First, is your software for Event Espresso up to date?
You can check to see if there are any updates through the WP plugins screen.
Next, have you recently installed any new plugins on your site?
If you are not sure, then what happens if you temporarily deactivate all plugins and reactivate only Event Espresso and MailChimp? Do the lists then show in the MailChimp settings area of your event editor?
If it works as expected then another plugin may be interfering. Try reactivating a few plugins at once and then re-test. Then continue this process until the lists stop showing up.
