For example, we are trying to collect date of birth, and if we use an open field, attendees will input the date of birth inconsistently. There is no way to provide a line of txt for each question or open field, to give instructions for how we want this inputted. We would like this to appear consistently on our reports, so a drop down with all the months, days and years would be most consistent.

I know exactly what you mean and, unfortunately, it’s not possible at this time (or at least, nothing that is possible would be very ideal). You could use a jQuery plugin to format the date the way you want in a regular input box with something like these:
