Is there a short code for total approved registration receipts per event?

I don’t believe so, but I’m not sure I follow your question.
May I ask, what exactly would the shortcode output? All of the PDF’s receipts for Approved registrations?

Transactions>Reports shows an array in a barchart with the total money collected for each of the events to date. Is there a shortcode to show individual totals per event, or a way to view this data as a spreadsheet?

Not currently no, we don’t have any further functionality for this than the screen you mentioned.
